I was prompted to write this post after coming home on Sunday night, opening my fridge, and finding half a punnet of old strawberries waiting for me…
As summer slowly comes to an end, so does berry season (check out my seasonal calendars for June, July, and August). Berries found at the market or supermarket will start to go off quicker, but don’t fear – you can still eat them even past their best!
This berry compote recipe is perfect for any old, leftover berries you need to use up. You could also use frozen berries, or a mix of sorts depending on what you like! Just remember: blueberries will make your compote thick, while lighter berries such as raspberries or strawberries will be slightly thinner. I used blackberries in the one pictured for a tarter flavour!
Berry Compote Recipe
Serves 2 (with a dessert/yoghurt)
250g berries
30g sugar
1/2 lemon
- Wash and prepare your berries
- Put your berries, sugar, and the juice of half a lemon into a blender – I use my Nutribullet
- Whizz up until smooth
- Sieve over a bowl to remove any seeds
- Enjoy with a dessert – I really like this with coconut yoghurt and a pinch of cinnamon and oats!
P.S. You can store this compote for 2-3 days in the fridge after making it!
