Almost every morning, I like to have a smoothie for breakfast. It’s so good! I wake up looking forward to it, despite having had one for breakfast for years now.
My favourite smoothie always uses a base of banana – ripe, sliced and frozen the night before. It’s the perfect start, with its icy sweetness and yet a bland enough flavour to work with lots of other ingredients!
I usually like a combination of peanut butter and cacao (think liquid Reese’s Peanut Butter Cups) but I’ve been experimenting with vanilla recently, and stumbled upon a magic ratio using vanilla bean extract and almond butter. I love having some kind of nut butter in my smoothie, as it adds both nutrients and an added smoothness!

Vanilla bean smoothie recipe
Serves 1
1 ripe banana, sliced and frozen
1 cup plant milk
1/2 tsp vanilla bean extract
1 tsp almond butter
- Add your banana slices, milk, vanilla and almond butter into your blender or Nutribullet cup
- Pop on the lid/blades and blend for 20-30 seconds
- Pour into a glass and enjoy!
