Now that the sunshine is here, I’ve started to experiment with my meals a little more – there’s something about good weather that makes me want to make lighter, brighter meals!
I created this mango chia pudding recipe with Indigo Herbs, and I enjoyed it over two mornings last week. It’s perfect as a breakfast, but you could even have it as a sweet healthy snack during the day, or even a dessert after dinner.
